There has been A Lot going on in our world lately

There has been A Lot going on in our world lately and whilst dealing with it all, the thing that gets neglected for me is fb and insta lol, I work really hard to stay on schedule for YouTube but these platforms Urgh!
And I say regularly I’ve been slack, I’ll be better! And I still suck at it hehe.
So… a photo of canning from yesterday, we got some great deals on fruit and veg and now comes the big job of making sure they’re used!
Stewed apples for the shelf and some in the fridge for apple cinnamon scrolls and other things and a batch of Sally wise’s Worcestershire sauce with some plums I got!

I can’t get many good photos of the rescues as yet as they are still mostly confined to cages and some more hesitant than others to be handled :) but we also acquired a little ginger kitten as well who is much more inclined to accept our loving :D. Meet Sinatra, Panda, Duck and Toothless :). Slowly but surely they will integrate into the family, and help keep the rodent population down :)

I took delivery of my spiraliser for my Thermomix the other day! As a consultant I got to snag one a little earlier! I have been playing with it a bit, we did rice paper rolls (sans the rolls for D!) and I did sushi using the cutter to make prep easier while D and I spiralised some zucchini to make a carbonara esque dish with chicken! It’s been a fun add in to the meal decisions for this week even if we had to buy some fresh veg from town to use it lol!

The current promotion when you purchase a Thermomix is a pretty darn good offer so just letting you all know as well, I’d love a sale in January if anyone has been thinking about taking the leap lol.

I fell out of the habit of sharing on fb and Insta over my Christmas break and have struggled to get back into it! I am going to try lol!

A local had some surplus turkeys that he needed to rehome so we got Alber’turkey some friends! We’ve got them penned up for a while to learn this is home and then we’ll let them out to free range!

The heat has been bad! 42 today (forecast was a top of 39, but we always seem to get hotter) there was a fire locally a couple of days ago but they managed to get onto it nice and quick, fx we don’t get anymore during this heat!

Homemade sugar free (alternative sweetener used) c

Homemade sugar free (alternative sweetener used) chocolate chips! Patience galore required lol, but the results are pretty neat, definitely not a regular thing but for Christmas baking!

I used my Thermomix for these because I could, but a double boiler would work too!
85g cocoa butter
50g cocoa
50g sweetener (I used an allulose/monkfruit blend)

Grated the cocoa butter up, sp 10, 10 sec.

Melted the butter in the Thermomix, 50 degrees for a couple of minutes - mine had been stored in the fridge, so it needed some time.

Added the cocoa and sweetener in trying not to hit the blades and then experimented with time and temp - ended up at about 90, speed 3 for about 3 mins.

Notes- I would powder the sweetener. Even at that temp it was still a touch gritty!
They are dark/semi sweet, definitely not milky though it’s possible I could play with ingredients to make it more milky, but we like dark chocolate
I also think that using it as a drizzle or dip or even setting it as a bark and breaking it up would be less fiddly lol.

The kids are pulling weeds and tidying the garden for me this weekend (YouTube snarkies will be thrilled ;)) they came across this little critter so I googled and it appears to be a Pobblebonk! lol, the kids were very impressed with its name :)
